This week has flown by, again, without my permission. I had and still have high hopes for today. After our four-hour outing yesterday (doctor and other errands) I was hoping to spend today getting caught up on household chores and maybe even prepare a decent meal for my family.
Booger, as usual, has his own agenda. I definitely think he is going through a growth spurt. This whole week we have lucked out in the sleep department as he only gets up once during the night to eat. BUT lastnight, my dear son was up every hour wanting to eat, which meant by the time we were done with all the burping in between, etc. I was pretty much up the entire night. Which meant my early start for today went out the window. I spent my morning taking a nap with my son. He is still sleeping! O'well, the kid is on his own feeding schedule now and keeping us on our toes.
Now afternoon is just around the corner and I have nothing to show for my good intentions. I will have to start somewhere.
Our pediatrician appt. went very well. Gavin is up to seven pounds and is 19" long. Our next appt. is three weeks from now, get this, on May 7. The original due date. I wonder if all these special dates will stick in my mind forever. The day he was born, the day he came home and the day he was supposed to be born.
Menu for today:
My lunch (was supposed to be my breakfast/brunch): spinach, mushroom and ham omelet. YUM I am so glad we have groceries again. It was looking a little sad in the ol' Frigidaire. Dinner: either stir fry or green chile chicken enchiladas with brown rice and black beans. Double yum! Dessert? Strawberry Pie with a chocolate graham cracker crust. It's going to be a Baby Bjorn sorta of day with all this time in the kitchen. Just me, the kid, my cookbooks and some music...bliss.
TGIF blogger friends, I hope everyone has a wonderful weekend, etc.

Hope you guys have a wonderful weekend! Glad the little guy is growing!
Yum that pie looks good! I know the all night feeling....but they go so fast and then you'll miss them <3
Newborns and even toddlers have their own plans and agendas. Your days with him at home will always go fast and soon you will miss them. I am glad Gavin is growing and doing so good. Text me if you want I have some suggestions on the eating every hour. I went through it with Jace. Love you
Hello SUPER MOM!! Can I come to your house for a meal? All of that food sounds delish!!
I can't even believe how ambitious you are! 2 full meals cooked for yourself, including a pie!!! I need to spend sometime with you my dear!
The enchilada ingredients still sit neatly organized on my counter top and in the fridge. However, and more importantly, the strawberry pie is already half eaten and we have enjoyed nibbling on what turned out to be a much bigger meal than I thought, the spinach, mushroom, ham breakfast casserole. I just through it all in pyrex and baked the sucker. Not bad.
