Edamame

The one green vegetable I have been able to convince my two-year-old to eat these days. He actually eats a whole serving and then asks for more. Of course I retrieve the beans for him. He hasn't mastered the sucking of the pod to get the bean.

It was worth the trouble of shelling the beans to be able to include a serving of green goodness along side his mac-n-cheese the other day. I think the next time I am at the store I will buy a bag of the frozen pre-shelled and see if he likes those just as much. I wonder what it is about the soy bean that he prefers to green beans or peas? Do you think I would have the same sort of luck with the lima bean?

Anyhow, here is an edamame dip recipe I found on the Food Network. It's worth a try! I am definitely going to start experiementing with more vegetable-based dips in the coming months as I work on keeping veggies in my picky toddler's diet.

Mmmm I love me some edamame! And yay! for G for eating veggies. I pray Viv eats some too.

My nephew likes edamame too but won't touch peas or lima beans. He tells us it's because of the texture. So, maybe it's that?
